My question is the zipper.
The zipper on these boots runs up the back of the boot instead of the inner side of the boot.
Are we required to keep the zipper hidden as much as possible or is it allowed to have the zipper in full view on the back of the boot?

In general keep it hidden, but that can be done by adding a small strip of matching leather.

Now that the zipper issue is cleared up I will say this:
With the exception of Motor Cowboy those Qui Gonn Jinn boots are the closest I have seen to being movie accurate.

May I ask what's the best way to attach the leather to cover a back zipper -- as I said, I really like the look of half chaps, and every pair I've seen either have back or, more rarely, outside zippers.

best way?
I dunno.

how would I do it?
- glue 2 vertical strips of velcro (fuzzy side), along the length of the vertical zipper,
1 strip on either side of the zipper. ~1/2 inch wide, each strip.
- glue the 'hook side' of the velcro , to a ~1-inch-wide strip of semi-matching brown leather.
- place strip of brown leather over zipper , with velcro running up either side of the zipper, to hold it in place.
(strip of brown leather must be exactly wide enough to cover up your 1/2 inch vertical velcro strips)
